Having the right snacks to hand when you are following a healthy eating plan is really important. Good healthy snacks mean you’re less likely to overeat at main meal times or reach for something unhealthy in between meals.

Two really popular snack recipes with mums in the Healthy Mummy community are the Peanut Bubble Crunch and Mint Bubble Crunch. They are great recipes to make in bulk and are budget-friendly too!
Whip these up in just 15 minutes!
Both these recipes use rice bubbles as the main ingredient and are SUPER tasty, healthy and easy to whip up. In fact, you can make a batch of both recipes in just 15 minutes!
Not only are they fussy eater approved, we could even go as far as saying we guarantee they will be loved by the whole household. Make sure you hide some for yourself because they will fly off the plate.
All of our recipes have a pantry basics focus and these are no exception, you will most likely have all the ingredients ready to go right now!
For both recipes you can either use rice bubbles or puffed rice, the cheapest we have found are the breakfast bubbles from Aldi that are under $2.50 for a whole box.
If either of them don’t feel set or aren’t setting quick enough for your sugar cravings, pop them in the freezer to speed up the process, some of our mums love to have both of these recipes straight from the freezer – YUM.
How to Make Peanut Bubble Crunch
This Peanut Bubble Crunch recipe is just 124 calories per serve and works out as just 20 cents per serve. This recipe makes 18 serves and can be kept in the fridge or freezer.
Just separate your rice bubbles between two bowls, and mix the melted rice malt syrup, vanilla and coconut oil with the peanut butter. Add half of the peanut butter mixture to one of the bowls of rice bubbles, and add the cacao to the rest of the peanut butter mixture. They layer the two bowls of rice bubbles in a prepared tray. Let it set and top with chocolate.
If you need this to be nut-free, you can swap the peanut butter for Tahini but only if you love it! Tahini has a strong flavour and will change the taste entirely.

How to make Mint Bubble Crunch
Like the Peanut Bubble Crunch, the Mint Bubble crunch uses rice bubbles as the main ingredient but is flavoured with chocolate, coconut and mint. This recipe makes 14 serves and comes in at just 76 calories and 10 cents per serve.
Unlike the Peanut Bubble Crunch, this bubble crunch isn’t layered. The chocolate is melted and combined with the rice malt syrup, mint and coconut oil, and mixed with the rice bubbles and coconut. The mixture is put into a pan to set.
You don’t need to make the flavour of this mint, in fact these could almost pass as LCM bars without the high sugar content, just swap the mint essence for vanilla essence!
