Ingredients
- 6 eggs
- 3 tbsps milk of choice
- 1/3 cup grated cheese cheddar or tasty
- 60 g smoked ham chopped
- 1/4 small red capsicum
- 1/2 cup chopped spinach
- Salt and pepper to taste
- 1 tbsp fresh chives
- Olive oil spray

Instructions
- Preheat oven to 180c.
- Mix eggs and milk together
- Add cheese, ham, capsicum, spinach, salt and pepper, mix well.
- Spray tray of choice (can use muffin tray, mini loaf trays etc) with olive oil spray to prevent sticking if needed, then spoon mixture into tray.
- Top with chives.
- Place in the oven for 18 minutes or until cooked through.
- Serve immediately or can be placed in the fridge to eat later, cold or heated up.
